Ingredients
  

Main Ingredients
  • 1 cup full-fat cottage cheese (224g)
  • 2 large eggs room temperature
  • ½ cup granulated sugar (100g, or coconut sugar)
  • ½ cup unsweetened cocoa powder (43g)
  • ½ cup semi-sweet chocolate chips (60g, plus more for topping)
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 pinch espresso powder (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and position a rack in the middle. Line an 8×8 inch baking pan with parchment paper, leaving 2-inch overhang on two opposite sides.
  2. Add the cottage cheese, eggs, granulated sugar, and vanilla extract to a high-speed blender. Blend on high for 30-60 seconds until smooth.
  3. Add the cocoa powder, baking powder, and salt to the blender. Pulse just until combined, about 10-15 seconds.
  4. Remove the blender jar and gently stir in the chocolate chips by hand using a spatula.
  5. Pour the brownie batter into the prepared pan and smooth the top with a spatula. Sprinkle additional chocolate chips on top if desired.
Baking
  1. Bake for 20-25 minutes until the edges are set but the center looks slightly underdone. A toothpick inserted should come out with a few moist chocolate crumbs.
Cooling
  1. Let the brownies cool completely in the pan for at least 30 minutes. For clean cuts, refrigerate for 1 hour before slicing into 16 squares.

Notes

These brownies can be served warm with vanilla ice cream or fresh fruit. Store leftovers in an airtight container for up to two days at room temperature or refrigerate for about a week. Freeze for up to three months in individual portions.
