Ingredients
  

Brownie Batter
  • 1 cup cottage cheese (blended smooth) Ensure it's blended well to avoid lumps.
  • 2 large eggs
  • 1/3 cup maple syrup or honey Adjust according to sweetness preference.
  • 1/4 cup melted coconut oil or unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup oat flour Can substitute with gluten-free flour.
  • 1/4 cup unsweetened cocoa powder For a richer flavor, use dark cocoa powder.
  • 1/4 cup chocolate protein powder Can substitute with vanilla or other flavors.
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup dark chocolate chips Additional for topping.
  • 1/4 cup chopped walnuts or pecans Optional ingredient.

Preparation
  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
  2. Blend the cottage cheese until completely smooth.
  3. In a mixing bowl, whisk together the cottage cheese, eggs, maple syrup, melted oil, and vanilla until smooth.
  4. In a separate bowl, whisk together the oat flour, cocoa powder, protein powder, baking powder, and salt.
  5. Combine the dry ingredients into the wet mixture and stir until just mixed.
  6. Fold in the chocolate chips and nuts if using.
  7. Pour the batter into the prepared pan and top with extra chocolate chips.
  8. Bake for 22–26 minutes until the edges are set and the center is still moist.
  9. Cool completely before slicing. For the best texture, refrigerate for 30 minutes before serving.

Notes

These brownies can be enjoyed warm or cold. Serve them plain, or add a scoop of yogurt or a drizzle of nut butter for extra flavor. Store in an airtight container in the refrigerator for up to a week or freeze for longer storage. Wrap tightly to prevent freezer burn.
