Preparation
- Preheat the oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
- Blend the cottage cheese until completely smooth.
- In a mixing bowl, whisk together the cottage cheese, eggs, maple syrup, melted oil, and vanilla until smooth.
- In a separate bowl, whisk together the oat flour, cocoa powder, protein powder, baking powder, and salt.
- Combine the dry ingredients into the wet mixture and stir until just mixed.
- Fold in the chocolate chips and nuts if using.
- Pour the batter into the prepared pan and top with extra chocolate chips.
- Bake for 22–26 minutes until the edges are set and the center is still moist.
- Cool completely before slicing. For the best texture, refrigerate for 30 minutes before serving.
Notes
These brownies can be enjoyed warm or cold. Serve them plain, or add a scoop of yogurt or a drizzle of nut butter for extra flavor. Store in an airtight container in the refrigerator for up to a week or freeze for longer storage. Wrap tightly to prevent freezer burn.
