Main Ingredients
  • 1 cup full-fat small curd cottage cheese Opt for full-fat for a creamier texture.
  • 3 large egg whites Approximately 100g.
  • ½ cup tomato sauce No-sugar-added preferred.
  • ½ teaspoon Italian seasoning or dried oregano Adds flavor.
  • ½ cup shredded part-skim mozzarella cheese For topping.
Optional Toppings
  • to taste turkey pepperoni Optional.
  • to taste olives Optional.
  • to taste bell peppers Optional.

Method
 

Preparation
  1. In a microwave-safe bowl, add 1 cup of cottage cheese and 3 egg whites. Stir until smooth and combined.
  2. Mix in ½ cup of tomato sauce and ½ teaspoon of Italian seasoning or dried oregano. Stir well to distribute flavors evenly.
  3. Sprinkle ½ cup of shredded mozzarella evenly on top. Add any optional toppings if desired.
Cooking
  1. Microwave on high for 1-2 minutes until the cheese melts and egg whites are set. Alternatively, transfer to a small skillet over medium heat or broil in the oven for a minute to melt the cheese and warm through.
Serving
  1. Grab a spoon and enjoy your creamy, cheesy bowl packed with 30g of protein.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in the microwave or on the stovetop with a splash of water or tomato sauce.
