Ingredients
  

Base Ingredients
  • 1 cup cottage cheese (must be blended until completely smooth)
  • 1/4 cup pizza sauce or marinara sauce
  • 1 tablespoon gluten-free flour or almond flour (for binding)
Vegetables
  • 1/4 cup bell peppers (chopped, any color)
  • 1/8 cup red onions (sliced)
  • 1/8 cup black olives (chopped)
  • 1 teaspoon oregano or Italian seasoning
Toppings
  • 1/4 cup light mozzarella cheese (shredded)
  • 4 slices turkey pepperoni
  • Salt and black pepper (to taste)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Blend cottage cheese for 30-45 seconds until completely smooth. Transfer to a mixing bowl.
  3. Add pizza sauce, gluten-free flour, bell peppers, onions, olives, oregano, salt, and pepper to the bowl. Stir until combined.
Baking
  1. Transfer mixture to a 2-cup oven-safe bowl. Sprinkle mozzarella cheese on top and arrange turkey pepperoni.
  2. Bake for 5-7 minutes until cheese is melted and bubbly, and pepperoni is crisped.
Serving
  1. Remove from oven and let cool for 2-3 minutes. Garnish with fresh basil, parsley, or Parmesan cheese if desired.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat as necessary. If mixture thickens, stir in water or more sauce.
