  • 4 large eggs
  • 1/2 cup oats Gluten-free if necessary.
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
For Cooking

Method
 

Preparation
  1. In a blender, combine the cottage cheese, eggs, oats, baking powder, vanilla extract, and salt until smooth.
  2. Preheat a non-stick skillet over medium heat and lightly grease with cooking spray or oil.
Cooking
  1. Pour 1/4 cup of the batter onto the skillet for each hot cake.
  2. Cook for 3-4 minutes on each side, or until golden brown.

Notes

Can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, microwave for 30 seconds, or heat in a skillet. May also be frozen for up to 2 months.
