Ingredients
  

For the Flatbread
  • 1 cup cottage cheese Use any type of cottage cheese.
  • 2 large eggs
  • 1 cup almond flour Can substitute with flour of your choice.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • optional herbs and spices Such as garlic powder, oregano, or pepper for extra flavor.

Method
 

Prepare the Batter
  1. In a mixing bowl, combine the cottage cheese and eggs. Whisk together until smooth.
  2. Add the almond flour, baking powder, and salt. Mix until a uniform dough forms.
  3. If you prefer extra flavor, toss in your chosen herbs and spices at this stage.
Cook the Flatbreads
  1. Heat a non-stick skillet over medium heat and lightly grease it with oil or cooking spray.
  2. Pour a portion of the batter into the skillet, spreading it out to form a flat circle. Cook for 2-3 minutes on one side until bubbles begin to form.
  3. Flip the flatbread and cook for another 2 minutes on the other side until golden brown and fully cooked.
  4. Repeat with the remaining batter, adjusting the heat as necessary to avoid burning.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. These flatbreads can be frozen for longer storage; separate them with parchment paper before freezing to prevent sticking. Customize with different types of flour or add-ins like chopped spinach or sun-dried tomatoes for extra flavor.
