Preparation
- Preheat your oven to 350°F (175°C) and grease a muffin tin with olive oil or cooking spray.
- In a mixing bowl, whisk together the eggs and cottage cheese until well combined.
- Stir in the mixed veggies and shredded cheese.
- Season the mixture with salt and pepper to taste.
- Pour the mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and lightly golden.
- Allow to cool slightly before removing from the tin.
Serving
- Serve warm or refrigerate for a quick breakfast or snack option.
Notes
Store in an airtight container in the fridge for about 4-5 days. For longer storage, freeze them for up to 3 months.
