  • 1/4 cup onion, diced Use red or yellow for sweetness.
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1 serving Cooking spray or oil for greasing Use as needed.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
  2. In a mixing bowl, combine the cottage cheese, eggs, salt, pepper, garlic powder, and paprika, and whisk until well blended.
  3. Fold in the diced bell peppers, spinach, and onion until evenly distributed.
  4. Pour the mixture into the greased muffin tin, filling each cup about 3/4 full.
Baking
  1. Bake in the preheated oven for 20-25 minutes, or until the bites are set and lightly golden on top.
  2. Allow to cool slightly before removing from the tin.
Serving
  1. Serve warm or store in the refrigerator for an easy breakfast option throughout the week.

Notes
