Preparation
- Preheat your oven to 375°F (190°C).
- Grease a 9x9 inch (or similar size) baking dish with cooking spray or olive oil to prevent sticking.
- In a large mixing bowl, combine the eggs, cottage cheese, spinach or mixed vegetables, shredded cheese, garlic powder, salt, and pepper. Mix well until all ingredients are fully incorporated.
- Transfer the mixture to the prepared baking dish, spreading it evenly.
Baking
- Place the dish in the oven and bake for 30-35 minutes, or until the eggs are set and the top is golden brown.
Serving
- Remove from the oven and allow it to cool for a few minutes before slicing.
- Serve warm, or let it cool completely before storing in the refrigerator.
