  • 1 cup cottage cheese Use low-fat or non-fat for a lighter option.
  • 1 cup all-purpose flour Can substitute half with whole wheat flour for more fiber.
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder Optional

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the cottage cheese, egg, and olive oil until combined.
  3. In another bowl, whisk together the flour, baking powder, baking soda, salt, and garlic powder (if using).
  4. Gradually add the dry ingredients to the wet mixture until a dough forms.
  5. Divide the dough into buns and shape them as desired.
  6. Place the buns on a baking sheet lined with parchment paper.
  7. Bake for 15-20 minutes or until golden brown.
  8. Let cool before using for your favorite burgers.

Notes

Store leftover buns in an airtight container at room temperature for up to 2 days or freeze for up to 3 months.
