  • 1 cup cottage cheese Ensure it is blended smooth for best results.
  • 1/2 cup cocoa powder Use Dutch-processed for smoother flavor.
  • 1/2 cup honey or maple syrup Adjust to taste if you prefer sweeter brownies.
  • 1/4 cup vegetable oil Can be substituted with melted coconut oil.
  • 2 large eggs Can be replaced with flaxseed mix for vegan option.
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour Can substitute with all-purpose flour if preferred.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips Optional; add for extra chocolate flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a mixing bowl, blend the cottage cheese until smooth.
  3. Add honey or maple syrup, vegetable oil, eggs, and vanilla extract. Mix until well combined.
  4. In another bowl, whisk together the whole wheat flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in chocolate chips if using.
  7. Pour the batter into the prepared baking pan and smooth the top.
Baking
  1. Bake for 25-30 minutes or until a toothpick comes out clean.
  2. Let cool before cutting into squares and serving.

Notes

Store leftovers in an airtight container at room temperature for up to three days. For longer storage, refrigerate for up to a week or freeze for up to three months, layering with parchment paper to prevent sticking.
