Preparation
- Preheat oven to 350°F (175°C) and grease an 8x8-inch baking pan or line with parchment paper.
- Blend cottage cheese until smooth and creamy in a food processor or mixer.
- Add granulated sugar, honey/maple syrup, and vanilla extract to the cottage cheese and mix until smooth.
- Add eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together cocoa powder, flour, and baking powder.
- Gradually combine dry ingredients with the wet mixture until just incorporated.
- Fold in chocolate chips if using.
- Pour the batter into the prepared pan and spread evenly.
Baking
- Bake for 25-30 minutes, checking with a toothpick for moist crumbs.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting.
Notes
Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Freeze wrapped pieces for up to 3 months.
