  • 1 cup cottage cheese Blend until smooth
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/4 cup honey or maple syrup Can use either sweetener
  • 2 large eggs Room temperature
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chocolate chips (optional) For added chocolate flavor

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and grease an 8x8-inch baking pan or line with parchment paper.
  2. Blend cottage cheese until smooth and creamy in a food processor or mixer.
  3. Add granulated sugar, honey/maple syrup, and vanilla extract to the cottage cheese and mix until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. In a separate bowl, whisk together cocoa powder, flour, and baking powder.
  6. Gradually combine dry ingredients with the wet mixture until just incorporated.
  7. Fold in chocolate chips if using.
  8. Pour the batter into the prepared pan and spread evenly.
Baking
  1. Bake for 25-30 minutes, checking with a toothpick for moist crumbs.
  2. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Freeze wrapped pieces for up to 3 months.
