Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, separate the egg whites from the yolks.
- Beat the egg whites with a pinch of salt until soft peaks form.
- In another bowl, combine the cottage cheese, almond flour, baking powder, vanilla extract, and egg yolks. Mix until smooth.
- Gently fold the beaten egg whites into the cottage cheese mixture, taking care not to deflate the batter.
Baking
- Once the mixture is well combined, gently fold in the fresh blueberries until evenly distributed.
- Scoop the batter onto the prepared baking sheet, shaping it into individual cloud-like mounds.
- Bake for about 20-25 minutes or until the tops are golden brown and firm to the touch.
Cooling and Serving
- Allow the cloud bread to cool on a wire rack for a few minutes before serving. Enjoy it warm or at room temperature.
Notes
Your Cottage Cheese Blueberry Cloud Bread can be enjoyed in various ways: Toast a slice and spread almond butter or Greek yogurt on top for breakfast. Enjoy it as is for a snack, or add cinnamon or a drizzle of honey for dessert.
