  • 1/2 cup fresh blueberries Frozen blueberries can be used, ensure they are thawed.
  • 1 pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, separate the egg whites from the yolks.
  3. Beat the egg whites with a pinch of salt until soft peaks form.
  4. In another bowl, combine the cottage cheese, almond flour, baking powder, vanilla extract, and egg yolks. Mix until smooth.
  5. Gently fold the beaten egg whites into the cottage cheese mixture, taking care not to deflate the batter.
Baking
  1. Once the mixture is well combined, gently fold in the fresh blueberries until evenly distributed.
  2. Scoop the batter onto the prepared baking sheet, shaping it into individual cloud-like mounds.
  3. Bake for about 20-25 minutes or until the tops are golden brown and firm to the touch.
Cooling and Serving
  1. Allow the cloud bread to cool on a wire rack for a few minutes before serving. Enjoy it warm or at room temperature.
