  • 2 pieces Cornish hens (about 1-2 pounds each)
  • 2 tablespoons olive oil or melted butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme (or fresh if available)
  • 1 piece lemon, quartered
  • 2 sprigs fresh rosemary (optional)
  • 1 cup chicken broth (for basting)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pat the Cornish hens dry with paper towels to ensure crispy skin.
  3. Rub each hen with olive oil or melted butter, then sprinkle with salt, pepper, garlic powder, onion powder, and thyme. Season inside the cavity as well.
  4. Place a few lemon quarters and rosemary sprigs inside each hen for added flavor.
  5. Arrange the hens breast side up in a roasting pan or on a baking sheet.
Cooking
  1. Pour chicken broth into the bottom of the pan for moisture.
  2. Roast in the preheated oven for about 50-60 minutes, or until the internal temperature reaches 165°F (75°C). Baste with broth every 20 minutes.
  3. Once done, remove from the oven and let them rest for 10 minutes before carving.

Notes

For extra juicy meat, consider brining the hens in a simple saltwater solution for a few hours before cooking. Always check the internal temperature of the hens to ensure they are cooked through but not overdone.
