Preparation
- Preheat your oven to 400°F (200°C).
- Pat the Cornish hens dry with paper towels to ensure crispy skin.
- Rub each hen with olive oil or melted butter, then sprinkle with salt, pepper, garlic powder, onion powder, and thyme. Season inside the cavity as well.
- Place a few lemon quarters and rosemary sprigs inside each hen for added flavor.
- Arrange the hens breast side up in a roasting pan or on a baking sheet.
Cooking
- Pour chicken broth into the bottom of the pan for moisture.
- Roast in the preheated oven for about 50-60 minutes, or until the internal temperature reaches 165°F (75°C). Baste with broth every 20 minutes.
- Once done, remove from the oven and let them rest for 10 minutes before carving.
Notes
For extra juicy meat, consider brining the hens in a simple saltwater solution for a few hours before cooking. Always check the internal temperature of the hens to ensure they are cooked through but not overdone.
