Ingredients
  

For the Cornish Hens
  • 2 pieces Cornish hens
  • 1 cup apricot preserves
  • 2 tablespoons Dijon mustard
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
For the Wild Rice Dressing
  • 1 cup wild rice
  • 2 cups chicken broth
  • 1 large onion, diced
  • 1 cup celery, diced
  • 1 cup cranberries

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together apricot preserves, Dijon mustard, soy sauce, garlic powder, onion powder, salt, and pepper.
Baking the Hens
  1. Place the Cornish hens in a roasting pan and brush them generously with the apricot glaze.
  2. Bake the hens for about 1 hour or until the internal temperature reaches 165°F (74°C).
Preparing the Wild Rice
  1. In a pot, sauté onion and celery until softened.
  2. Add the wild rice and chicken broth to the pot. Bring to a boil, reduce heat, cover, and simmer for about 45 minutes until the rice is cooked through.
  3. Stir in cranberries and season with salt and pepper to taste.
Serving
  1. Serve the Cornish hens alongside the wild rice dressing for a meal that looks and tastes incredible.

Notes

For an even more flavorful glaze, marinate the hens in the apricot mixture for an hour before baking. Pair with seasonal vegetables or a salad for a complete meal.
