Preparation
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix together the salt, dried thyme, dried rosemary, black pepper, and garlic powder.
- Pat the Cornish game hens dry with paper towels. Rub the hens all over with olive oil, ensuring to get under the skin for extra flavor.
- Generously sprinkle the herb mixture over the hens, inside and out.
- Stuff each hen with fresh rosemary, fresh thyme, quartered onions, lemon slices, and garlic cloves.
Cooking
- Place the hens in a roasting pan, breast-side up, and surround them with any leftover onions, lemons, and garlic for added flavor.
- Roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
- Let the hens rest for 10 minutes before serving to ensure they retain their juiciness.
Notes
Can be served whole or halved. Pair with garlic mashed potatoes, roasted vegetables, or a crisp green salad. Drizzle with pan jus or homemade gravy for extra flavor. Store leftovers in an airtight container for 3–4 days, or freeze for up to 3 months.
