Ingredients
  

For the Marinade
  • ½ tablespoon salt
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
For the Hens
  • 2 pieces Cornish game hens, thawed (1 to 1.5 pounds each)
  • 2 tablespoons olive oil For rubbing on the hens
  • 6 sprigs fresh rosemary
  • 6 sprigs fresh thyme
  • 1 large yellow onion, peeled and quartered
  • 2 pieces lemons, sliced
  • 4 cloves garlic, peeled

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the salt, dried thyme, dried rosemary, black pepper, and garlic powder.
  3. Pat the Cornish game hens dry with paper towels. Rub the hens all over with olive oil, ensuring to get under the skin for extra flavor.
  4. Generously sprinkle the herb mixture over the hens, inside and out.
  5. Stuff each hen with fresh rosemary, fresh thyme, quartered onions, lemon slices, and garlic cloves.
Cooking
  1. Place the hens in a roasting pan, breast-side up, and surround them with any leftover onions, lemons, and garlic for added flavor.
  2. Roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
  3. Let the hens rest for 10 minutes before serving to ensure they retain their juiciness.

Notes

Can be served whole or halved. Pair with garlic mashed potatoes, roasted vegetables, or a crisp green salad. Drizzle with pan jus or homemade gravy for extra flavor. Store leftovers in an airtight container for 3–4 days, or freeze for up to 3 months.
