Ingredients

Base Ingredients
  • 6 servings instant mashed potatoes Instant for convenience; homemade offers richer flavor.
  • 1 24 oz package popcorn chicken Cooked to crispy perfection; use homemade or favorite brand.
  • 1 15 oz can corn Drained and heated; fresh or frozen corn can also be used.
  • 1 pkg beef gravy Cooked according to package instructions; homemade version elevates flavors.
  • 2 cups shredded cheddar cheese Melts beautifully for gooey goodness.

Method

Preparation
  1. Prepare instant mashed potatoes according to package instructions, ensuring they're creamy and fluffy.
  2. While the potatoes are cooking, prepare the popcorn chicken by baking or frying until golden brown and crispy.
  3. Heat the drained corn in a small saucepan until warmed through.
  4. In another pot, prepare the beef gravy according to package instructions. If making homemade, this will enhance flavors.
Assembly
  1. Start with a generous scoop of mashed potatoes at the bottom of a bowl.
  2. Layer on the crispy popcorn chicken.
  3. Add the sweet corn.
  4. Pour over the warm beef gravy.
  5. Sprinkle the shredded cheddar cheese on top and let it melt slightly.
Serving
  1. Serve immediately and enjoy the warm, delicious layers!

Notes

If you have leftovers, store bowls in an airtight container in the refrigerator for about 3 days. Reheat in the microwave, adding a splash of water to the mashed potatoes to keep them creamy.
