  • 1 cup lentils green or brown lentils work best
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth ensure it's vegan if needed
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • 2 tablespoons olive oil or any neutral oil
  • for garnish Fresh parsley

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
  3. Stir in the garlic and cook for another minute.
  4. Add the lentils, broth, diced tomatoes, cumin, paprika, salt, and pepper.
  5. Bring to a boil, then reduce the heat and simmer for 30-40 minutes, or until the lentils are tender.
  6. Adjust seasoning if needed and serve hot, garnished with fresh parsley.

Notes

Serve with crusty bread or a fresh salad for added crunch. Leftover stew can be stored in an airtight container in the refrigerator for 3-4 days or frozen for up to 3 months.
