Preparation
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly.
- In a large bowl, combine the flour, granulated sugar, baking powder, salt, and cinnamon. Stir well.
- In a separate bowl, whisk together melted butter, milk, eggs, and vanilla extract until smooth.
- Pour wet ingredients into dry ingredients and gently mix until just combined.
- In a small bowl, mix flour, brown sugar, and cinnamon for the streusel topping. Add cold butter pieces and mix until it resembles coarse crumbs.
- Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
- Evenly sprinkle the streusel mixture over the muffin batter.
Baking
- Bake in the preheated oven for 18-22 minutes, or until a toothpick comes out clean.
- Allow muffins to cool in the pan for about 5 minutes before transferring to a wire rack.

Serve warm with butter and enjoy with coffee or tea. For storage, keep in an airtight container for up to 3-4 days, or freeze for longer lasting freshness.
