Ingredients
  

For the muffins
  • 2 cups all-purpose flour Spoon and level to measure properly.
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted Make sure to let it cool slightly before mixing with wet ingredients.
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup whole milk
  • 2 large eggs Can substitute with unsweetened applesauce or flaxseed mixture.
  • 1/2 teaspoon vanilla extract
For the streusel topping
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter, cold and cut into small pieces Ensure butter is cold for crumbly texture.
  • 1 teaspoon ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, combine the flour, granulated sugar, baking powder, salt, and cinnamon. Stir well.
  3. In a separate bowl, whisk together melted butter, milk, eggs, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and gently mix until just combined.
  5. In a small bowl, mix flour, brown sugar, and cinnamon for the streusel topping. Add cold butter pieces and mix until it resembles coarse crumbs.
  6. Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Evenly sprinkle the streusel mixture over the muffin batter.
Baking
  1. Bake in the preheated oven for 18-22 minutes, or until a toothpick comes out clean.
  2. Allow muffins to cool in the pan for about 5 minutes before transferring to a wire rack.

Notes

Serve warm with butter and enjoy with coffee or tea. For storage, keep in an airtight container for up to 3-4 days, or freeze for longer lasting freshness.
