Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
- In a mixing bowl, combine the cottage cheese, crushed pineapple, honey or maple syrup, milk, melted coconut oil, eggs, and vanilla extract. Stir until well mixed.
- In another bowl, whisk together the flour, shredded coconut, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix; a few lumps are okay.
- Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
Baking
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store any leftover muffins in an airtight container at room temperature for up to three days. For longer storage, freeze them in a freezer-safe bag or container for up to three months.
