Cooking
- Heat olive oil in a skillet over medium heat.
- Season chicken breasts with salt and pepper, then add to the skillet. Cook until browned and fully cooked, about 6-7 minutes per side. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute.
- Pour in coconut milk and soy sauce, stirring to combine. Bring to a simmer.
- Add the cooked chicken back into the skillet and sprinkle the chopped basil over the top. Simmer for an additional 2-3 minutes.
- Serve over cooked pasta.
Notes
Sprinkle additional fresh basil on top before serving. Pairs well with a light salad or steamed vegetables.
