Ingredients
  

Main ingredients
  • 2 pieces chicken breasts Skinless for a lighter option
  • 1 can coconut milk
  • 1 cup fresh basil leaves, chopped Use fresh basil for the best flavor
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • to taste Salt and pepper
  • 1 tablespoon olive oil
For serving
  • as needed Cooked pasta Spaghetti or rice noodles work well

Method
 

Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken breasts with salt and pepper, then add to the skillet. Cook until browned and fully cooked, about 6-7 minutes per side. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for 1 minute.
  4. Pour in coconut milk and soy sauce, stirring to combine. Bring to a simmer.
  5. Add the cooked chicken back into the skillet and sprinkle the chopped basil over the top. Simmer for an additional 2-3 minutes.
  6. Serve over cooked pasta.

Notes

Sprinkle additional fresh basil on top before serving. Pairs well with a light salad or steamed vegetables.
