Preparation
- Preheat the oven to 350°F (175°C). Grease an 8-inch square baking pan.
- In a bowl, mix 1 cup flour, 1/2 cup powdered sugar, softened butter, and salt until crumbly. Press this mixture into the bottom of the prepared pan to form the crust.
- Bake the crust for 15 minutes until lightly golden.
Making the Filling
- In another bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, and 1/4 cup flour until smooth.
- Pour the filling over the baked crust.
- Bake for an additional 20-25 minutes or until the filling is set.
Finishing
- Allow the bars to cool completely, then dust with powdered sugar before serving.
Notes
These bars are best served with a cup of tea or coffee. Store in an airtight container at room temperature for up to 2 days, refrigerate for up to a week, or freeze for up to 3 months.
