- In a crockpot, combine the diced potatoes, chopped onion, minced garlic, and broth.
- Cover and cook on low for 6-8 hours or high for 4 hours, until the potatoes are tender.
- Use a potato masher to mash some of the potatoes for a creamier texture, or blend part of the soup if desired for a smooth consistency.
- Stir in the heavy cream and season with salt and pepper.
- Serve hot, topped with crispy onions, bacon, or chives, as desired.
Notes
For added depth of flavor, sauté the onions and garlic before adding them to the crockpot. For a lighter version, swap heavy cream for half-and-half or evaporated milk.
