  • 4 large russet potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • to taste Salt and pepper

  • bacon
  • chives

Method
 

Preparation
  1. In a crockpot, combine the diced potatoes, chopped onion, minced garlic, and broth.
  2. Cover and cook on low for 6-8 hours or high for 4 hours, until the potatoes are tender.
  3. Use a potato masher to mash some of the potatoes for a creamier texture, or blend part of the soup if desired for a smooth consistency.
  4. Stir in the heavy cream and season with salt and pepper.
  5. Serve hot, topped with crispy onions, bacon, or chives, as desired.

Notes

For added depth of flavor, sauté the onions and garlic before adding them to the crockpot. For a lighter version, swap heavy cream for half-and-half or evaporated milk.
