Preparation
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts with salt and pepper.
- Set up a breading station: place flour in one bowl, beaten eggs in another, and a mixture of breadcrumbs and grated Parmesan in a third bowl.
- Dredge each chicken breast in flour, dip in egg, then coat in the breadcrumb mixture.
Cooking
- Heat olive oil in a skillet over medium heat, and fry the breaded chicken until golden brown on both sides (about 4-5 minutes per side).
- In a baking dish, spread some marinara sauce on the bottom. Place the fried chicken on top, then cover with the remaining marinara sauce and sprinkle mozzarella cheese on top.
- Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden.
Serving
- Serve with pasta, salad, or garlic bread.
Notes
To store leftovers, allow the chicken to cool completely. Store in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months. Thaw in the fridge overnight before reheating.
