  • 4 pieces boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/4 cup all-purpose flour
  • 2 large eggs beaten
  • Salt and pepper to taste
  • Olive oil for frying

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper.
  3. Set up a breading station: place flour in one bowl, beaten eggs in another, and a mixture of breadcrumbs and grated Parmesan in a third bowl.
  4. Dredge each chicken breast in flour, dip in egg, then coat in the breadcrumb mixture.
Cooking
  1. Heat olive oil in a skillet over medium heat, and fry the breaded chicken until golden brown on both sides (about 4-5 minutes per side).
  2. In a baking dish, spread some marinara sauce on the bottom. Place the fried chicken on top, then cover with the remaining marinara sauce and sprinkle mozzarella cheese on top.
  3. Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden.
Serving
  1. Serve with pasta, salad, or garlic bread.

Notes

To store leftovers, allow the chicken to cool completely. Store in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months. Thaw in the fridge overnight before reheating.
