Cinnamon Apple Oatmeal Bake

Ingredients
  

For the Oatmeal Bake
  • 2 cups old-fashioned rolled oats Do not use instant oats
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 cups milk Dairy, almond, or oat milk work well
  • 1 large egg, beaten
  • 1/4 cup pure maple syrup or honey
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 2 large apples, cored and chopped into bite-sized pieces
  • 1/2 cup chopped walnuts or pecans Optional

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Grease an 8x8 inch baking dish with a little butter or non-stick spray.
  2. In a large bowl, stir together the rolled oats, baking powder, ground cinnamon, and salt. If using nuts, add them here.
  3. In a separate medium bowl, whisk together the milk, egg, maple syrup, melted butter, and vanilla extract until well combined.
  4. Spread the chopped apples evenly over the bottom of the prepared baking dish.
  5. Pour the dry oat mixture over the apples and spread it out evenly.
  6. Slowly pour the liquid mixture over the oats. Gently shake the dish to make sure the milk reaches all the oats.
Baking
  1. Bake for 35 to 40 minutes. The top should be golden brown and the oats should be set.
  2. Remove from the oven and let it cool for 5 minutes before slicing and serving.

Notes

Serve warm, drizzled with extra maple syrup or topped with yogurt or chopped nuts. Store in an airtight container in the refrigerator for up to 4 days. It can be frozen for up to 3 months.
