- In a bowl, mix lime juice, cilantro, olive oil, salt, and pepper.
- Marinate the chicken breasts in the mixture for at least 15 minutes.
Cooking

- Serve the chicken on a bed of rice, topped with sliced avocado and extra cilantro.
Notes
For a deeper flavor, marinate chicken for a couple of hours or overnight. Can be served in salads or with tortillas.
