  • 1/4 cup fresh cilantro, chopped Feel free to adjust amount to taste.
  • 2 pieces limes, juiced Fresh limes are recommended.
  • 1 tablespoon olive oil Optional for additional flavor.
  • to taste Salt and pepper
For Serving
  • 1 piece avocado, sliced Add on top when serving.
  • Cooked rice For a complete meal.

Method
 

Preparation
  1. In a bowl, mix lime juice, cilantro, olive oil, salt, and pepper.
  2. Marinate the chicken breasts in the mixture for at least 15 minutes.
Cooking
  1. Heat a skillet over medium heat and cook the chicken for about 6-7 minutes per side, or until cooked through.
  2. Serve the chicken on a bed of rice, topped with sliced avocado and extra cilantro.

Notes

For a deeper flavor, marinate chicken for a couple of hours or overnight. Can be served in salads or with tortillas.
