  • 2 cups cooked rice Use white, brown, or cauliflower rice.
  • 1 lb chicken breast, diced Can use frozen chicken if fully thawed.
  • 1/4 cup fresh cilantro, chopped Freshness matters for the best flavor.
  • 1 unit lime, juiced Fresh lime juice is preferable.
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

Preparation
  1. In a bowl, mix olive oil, lime juice, cumin, garlic powder, salt, and pepper.
  2. Marinate the diced chicken in the mixture for at least 30 minutes.
Cooking
  1. Heat a skillet over medium heat and cook the marinated chicken until fully cooked, about 5-7 minutes.
Assembly
  1. In serving bowls, layer cooked rice and cooked chicken.
  2. Top with fresh cilantro and any optional toppings.

Notes

For meal prep, store leftovers in airtight containers in the refrigerator for up to 3 days. For longer storage, freeze the chicken and rice separately for up to 2 months. Reheat in the microwave or skillet.
