  • 1 cup apple cider
  • 1/4 cup pure maple syrup
  • 4 cloves garlic, minced
  • 5 sprigs fresh thyme
  • Salt and pepper to taste

Preparation
  1. Preheat your oven to 400°F (200°C). Lightly spray a baking dish with nonstick cooking spray to prevent sticking.
  2. In a bowl, whisk together the apple cider, maple syrup, minced garlic, and thyme until well combined.
  3. Pat the Cornish hens dry with paper towels and season them generously with salt and pepper.
  4. Place the hens in the prepared baking dish and pour half of the marinade over them. Let them marinate for at least 30 minutes at room temperature.
Cooking
  1. Cover the dish with foil and roast in the oven for 45 minutes.
  2. Remove the foil, baste the hens with the remaining marinade, and roast uncovered for an additional 15-20 minutes until golden brown and crispy on the outside.
  3. Serve the hens warm, drizzled with the glaze from the baking dish.

Notes

Let the Cornish hens sit at room temperature for about 30 minutes before cooking for even cooking. For a deeper flavor, marinate the hens overnight in the refrigerator. Use a meat thermometer; internal temperature should reach 165°F (74°C).
