  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
Wet Ingredients
  • 3/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1/2 cup unsulfured molasses

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, ground ginger, ground cinnamon, ground cloves, and salt until well combined.
  3. In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy, about 3-4 minutes.
  4. Beat in the egg and molasses until fully incorporated.
  5. Gradually mix the dry ingredients into the wet mixture until a smooth dough forms.
  6. Roll out the dough on a floured surface to about 1/4 inch thick.
  7. Cut into desired shapes and place on a baking sheet lined with parchment paper.
Baking
  1. Bake for 8-10 minutes or until the edges are slightly firm.
  2. Let cool completely before decorating.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze them between parchment paper for up to three months.
