  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract (optional) Optional for additional flavor
  • Royal icing or colored sugar for decoration

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, and salt until well combined.
  3. In another large bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the egg, vanilla extract, and optional almond extract until the mixture is smooth and well incorporated.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
  6. Roll out the dough on a floured surface to about 1/4 inch thickness. If the dough is too sticky, sprinkle a little more flour to make rolling easier.
  7. Use your favorite cookie cutters to cut out shapes and place them on baking sheets lined with parchment paper.
Baking
  1. Bake for 8-10 minutes or until the edges are lightly golden. Keep an eye on them to avoid overbaking!
  2. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack.
Decoration
  1. Once cooled, decorate with royal icing or colored sugar as desired. Share and enjoy the festive treats!

Notes

Chill the dough for at least an hour before rolling it out for better handling and shape retention. Use high-quality vanilla extract for better flavor. Though the almond extract is optional, it adds a delightful undertone to the cookies.
