Ingredients
  

Cookie Dough Ingredients
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • 1 1/2 cups white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
Royal Icing Ingredients
  • 3 cups powdered sugar
  • 2 large egg whites Can substitute with meringue powder.
  • 1 teaspoon lemon juice
  • Food coloring (optional) Use to decorate as desired.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the flour, baking soda, and baking powder together.
  3. In another bowl, cream together the softened butter and white sugar until smooth and fluffy.
  4. Beat in the egg, vanilla extract, and almond extract until well combined.
  5. Gradually blend the dry ingredient mixture into the wet ingredients until a dough forms.
Baking
  1. Roll rounded teaspoonfuls of dough into balls and place them onto ungreased baking pans.
  2. Flatten each ball lightly with a glass, and sprinkle colored sugar on top if desired.
  3. Bake for 8 to 10 minutes in the preheated oven until the edges are lightly golden.
Royal Icing Preparation
  1. Beat the egg whites together with lemon juice in a bowl.
  2. Gradually add the powdered sugar, mixing until the icing holds stiff peaks.
  3. Let the baked cookies cool completely, then decorate them with the royal icing as desired.

Notes

Store cookies in an airtight container at room temperature for about a week. For longer storage, freeze without icing for up to three months.
