Dry Ingredients
  • 1 and 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder Use unsweetened cocoa powder for best results.
  • 2 cups granulated sugar
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon salt
Wet Ingredients
  • 2 large eggs Use room temperature eggs for best results.
  • 1 cup whole milk Room temperature milk yields a smoother batter.
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water Carefully stir into the batter; it will be thin.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla to the dry ingredients; beat on medium speed for 2 minutes, ensuring everything is well mixed.
  4. Carefully stir in the boiling water (the batter will be thin, but that’s okay!).
  5. Pour the batter evenly into the prepared pans, making sure not to overfill them.
Baking
  1. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  2. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Notes

Serve this cake on its own or with whipped cream, vanilla ice cream, or warm chocolate sauce. For a festive touch, sprinkle powdered sugar on top.
