  • 1 cup mixed nuts (e.g., almonds, walnuts, pecans) Feel free to customize your nut mix
  • 1 cup dried fruits (e.g., cranberries, raisins, apricots) Choose your favorite dried fruits
  • 1/2 cup rice cereal
  • 1/4 cup honey or maple syrup Maple syrup can be used for a vegan option
  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. In a bowl, mix together the nuts, dried fruits, and rice cereal.
  2. In a microwave-safe bowl, melt the chocolate chips, stirring every 30 seconds until smooth.
  3. Add honey and vanilla extract to the melted chocolate and mix well.
  4. Pour the chocolate mixture over the nut and fruit mixture, stirring until everything is evenly coated.
  5. Line a baking dish with parchment paper and pour the mixture into it, spreading it evenly.
  6. Chill in the refrigerator for at least 30 minutes until firm.
  7. Once set, cut into bars and enjoy!

Notes

Store in an airtight container at room temperature for up to a week, or refrigerate for up to two weeks.
