Method
 

Preparation
  1. Preheat the oven to 325°F (163°C).
  2. Rinse the corned beef under cold water and pat dry.
  3. Place the corned beef in a roasting pan, fat side up.
  4. In a small bowl, mix together the Dijon mustard and brown sugar until well combined.
  5. Spread the mustard-brown sugar mixture evenly over the top of the corned beef.
  6. Season with salt and pepper to taste.
Cooking
  1. Cover the roasting pan with foil and bake for 2.5 to 3 hours, or until the meat is tender.
  2. Remove the foil during the last 30 minutes of baking for a caramelized crust.
  3. Let the corned beef rest for 10-15 minutes before slicing.
