  • 1/2 tsp baking soda
  • 1/4 tsp salt
Wet Ingredients
  • 1/2 cup peanut butter Can substitute with crunchy peanut butter for texture.
  • 1/2 cup sugar Can reduce by 1/4 cup for less sweetness.
  • 1/4 cup brown sugar
  • 1/2 cup milk Substitute with almond milk for a lactose-free version.
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 2 large eggs Can substitute with applesauce or flaxseed meal for egg-free.
Add-ins
  • 1/2 cup chocolate chips Add more for an extra chocolatey flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix together the flour, cocoa powder, baking powder, baking soda, and salt.
Mixing
  1. In another bowl, beat together the peanut butter, sugar, brown sugar, milk, oil, vanilla, and eggs until smooth.
  2. Gradually mix the dry ingredients into the wet ingredients until well combined.
  3. Fold in the chocolate chips.
Baking
  1. Divide the batter evenly among the muffin cups.
  2. Bake for 15-20 minutes or until a toothpick inserted comes out clean.
  3. Let cool before serving.

Notes

For storage, keep in an airtight container at room temperature for up to 3 days, or freeze for 2-3 months. Warm before serving for an enhanced taste.
