  • 2 cups rice cereal Any puffed rice cereal works, preferably gluten-free.
  • 1 cup powdered sugar Adjust to taste for sweetness.
  • 1 teaspoon vanilla extract Consider adding other flavor extracts like almond.

Preparation
  1. Melt chocolate chips, peanut butter, and butter in a saucepan over low heat, stirring until smooth.
  2. Remove from heat and stir in vanilla extract.
  3. In a large bowl, combine rice cereal and powdered sugar.
  4. Pour melted chocolate mixture over cereal mixture and mix until well-coated.
  5. Press the mixture into a greased 8×8-inch baking dish.
Setting
  1. Refrigerate for at least an hour until set.
  2. Cut into bars and serve.

Notes
