Ingredients
  

Wet Ingredients
  • 1 cup plain yogurt Use room temperature yogurt for best results.
  • 1 cup sugar
  • 1/2 cup vegetable oil Can substitute with melted coconut oil.
  • 3 large eggs Use room temperature eggs.
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour Can substitute half with whole wheat flour for extra fiber.
  • 1 tablespoon baking powder Can substitute with baking soda and vinegar.
  • 1/2 teaspoon salt
  • 1/2 cup cocoa powder For a richer flavor, add chocolate chips.
  • 1/2 cup hot water Helps to smooth out the cocoa powder.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a large bowl, mix the yogurt, sugar, oil, eggs, and vanilla until well combined.
  3. In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the yogurt mixture until just combined.
Baking
  1. Divide the batter in half. In one half, mix in the cocoa powder and hot water until smooth.
  2. Alternate spooning the plain batter and chocolate batter into the prepared pan. Use a knife to gently swirl the two batters together.
  3. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  4. Allow to cool before serving.

Notes

This cake can be served plain, dusted with powdered sugar, or with a dollop of whipped cream. Store it in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Wrap individual slices for freezing up to 3 months.
