  • 8 oz cream cheese, softened Make sure the cream cheese is at room temperature for easy mixing.
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
For the Cookies
  • 1 cup unsalted butter, softened Using unsalted butter allows better control of the cookie's saltiness.
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs Bring eggs to room temperature for better mixing.
  • 2 1/4 cups all-purpose flour Sift flour before measuring for accuracy.
  • 1 teaspoon baking soda

Method
 

Preparation of Cheesecake Filling
  1. In a medium bowl, mix together the softened cream cheese, granulated sugar, and vanilla extract until smooth. Set aside.
Preparation of Cookie Dough
  1. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  2. Add the vanilla extract and eggs one at a time, mixing well after each addition.
  3. In a separate bowl, whisk together the flour and baking soda.
  4. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
Assembly and Baking
  1. Preheat your oven to 350°F (175°C).
  2. Take a small portion of cookie dough and flatten it in your hand, add about a teaspoon of the cheesecake filling in the center, and wrap the dough around the filling, sealing it well.
  3. Place the wrapped cookies on a baking sheet lined with parchment paper, and bake for 12-15 minutes or until lightly golden.
  4. Let the cookies cool on a wire rack before serving.

Notes

These cookies are best enjoyed fresh but can be stored in an airtight container for up to 3 days. You can also freeze the assembled but unbaked cookies for later use.
