Preparation of Cheesecake Filling
- In a medium bowl, mix together the softened cream cheese, granulated sugar, and vanilla extract until smooth. Set aside.
Preparation of Cookie Dough
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the vanilla extract and eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together the flour and baking soda.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined.
Assembly and Baking
- Preheat your oven to 350°F (175°C).
- Take a small portion of cookie dough and flatten it in your hand, add about a teaspoon of the cheesecake filling in the center, and wrap the dough around the filling, sealing it well.
- Place the wrapped cookies on a baking sheet lined with parchment paper, and bake for 12-15 minutes or until lightly golden.
- Let the cookies cool on a wire rack before serving.
Notes
These cookies are best enjoyed fresh but can be stored in an airtight container for up to 3 days. You can also freeze the assembled but unbaked cookies for later use.
