Ingredients
  

For the Chicken
  • 4 pieces Chicken thighs Use skin-on for more flavor
  • 1/2 cup Chipotle honey sauce For marinating
For the Mashed Potatoes
  • 2 pounds Potatoes Peeled and chopped
  • 1/2 cup Butter For added creaminess
  • 1/4 cup Milk Adjust for desired consistency
  • 4 oz Smoked Gouda cheese Grated or chopped
  • 1 tsp Salt To taste
  • 1/2 tsp Pepper To taste

Method
 

Preparation
  1. Marinate the chicken thighs in chipotle honey sauce for at least 30 minutes.
  2. Preheat the oven to 375°F (190°C).
Cooking
  1. Bake the marinated chicken thighs for 25-30 minutes or until cooked through and caramelized.
  2. While the chicken is baking, peel and chop the potatoes, then boil them in salted water until tender.
  3. Drain the potatoes and return them to the pot.
  4. Add butter, milk, smoked Gouda cheese, salt, and pepper to the potatoes and mash until creamy.
Serving
  1. Serve the baked chicken thighs over the smoked Gouda mashed potatoes.

Notes

For extra flavor, consider adding garlic or herbs to the marinade. You can also substitute smoked Gouda with regular Gouda or cheddar. Ensure chicken reaches an internal temperature of 165°F (75°C).
