Ingredients
  

For the Chicken
  • 2 pieces boneless skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice (fresh preferred)
  • 2 cloves garlic (minced)
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Bowl
  • 1 cup cooked black beans (canned works great, rinsed)
  • 1 cup corn (grilled, roasted, or canned)
  • 1 piece avocado (sliced)
  • 1/4 cup fresh cilantro (chopped)
For the Creamy Sauce
  • 1/2 cup sour cream or Greek yogurt
  • 2 tablespoons lime juice (for sauce)
  • 1 tablespoon chipotle peppers in adobo (minced)
  • 1 teaspoon garlic powder
  • 1 teaspoon honey

Method
 

Marinate the Chicken
  1. In a medium mixing bowl, whisk together the olive oil, lime juice, minced garlic, chipotle chili powder, smoked paprika, cumin, salt, and pepper until everything is well combined.
  2. Add the chicken breasts or thighs to the bowl, turning to coat them thoroughly in the marinade. Cover the bowl and refrigerate for at least 30 minutes, or overnight for an even more robust flavor.
Cook the Chicken
  1. Heat your grill or a large skillet over medium-high heat.
  2. Once hot, remove the chicken from the marinade and cook for 6-7 minutes per side, depending on the thickness, until the internal temperature reaches 165°F and the chicken has nice char marks.
  3. After cooking, let it rest for 5 minutes before slicing it into strips.
Prepare Other Ingredients
  1. While the chicken rests, warm the black beans in a small saucepan over low heat or microwave until heated through. Add a pinch of cumin and salt to enhance the flavor.
  2. If using frozen corn, char it in a dry skillet on high heat for about 3-4 minutes until golden spots appear.
Make the Creamy Sauce
  1. Prepare the creamy chipotle sauce by whisking together sour cream or Greek yogurt, lime juice, minced chipotle peppers, garlic powder, and honey in a small bowl.
  2. Taste and adjust the heat to your preference.
Assemble the Bowl
  1. Assemble your bowls by layering warm black beans, charred corn, sliced avocado, and the sliced chicken.
  2. Drizzle generously with the creamy chipotle sauce and finish with a sprinkle of fresh cilantro.
  3. Serve with lime wedges on the side for an extra zesty kick!

Notes

For enhanced flavor, marinate the chicken overnight. Customize your bowl with toppings like jalapeños, shredded cheese, or more veggies.
