Ingredients
  

For the Marinade
  • 1/4 cup soy sauce
  • 2 tablespoons honey or maple syrup/agave nectar as a substitute
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced fresh preferred
  • 1 teaspoon fresh ginger, grated fresh preferred
  • 1 teaspoon cornstarch
  • 1/2 teaspoon black pepper
For the Skewers
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • Wooden or metal skewers If using wooden, soak in water for at least 30 minutes

Method
 

Marinating the Chicken
  1. In a bowl, combine the soy sauce, honey, sesame oil, minced garlic, grated ginger, cornstarch, and black pepper. Mix well to create a marinade.
  2. Add the chicken pieces to the marinade, ensuring they are evenly coated. Cover the bowl and refrigerate for at least 30 minutes or up to 2 hours for more flavor.
Cooking the Chicken
  1. Preheat your grill or broiler on medium-high heat.
  2. While the grill heats up, thread the marinated chicken pieces onto skewers. Optionally add bell peppers, onions, or zucchini.
  3. Place the skewers on the grill or under the broiler. Cook for about 5-7 minutes per side until the chicken is cooked through and has nice grill marks.
  4. Remove from heat and let them rest for a few minutes before serving.

Notes

Serve with steamed rice or a salad. A soy sauce and honey dipping sauce enhances the flavors. Leftovers can be stored in an airtight container for up to 3 days.
