- Heat vegetable oil in a large skillet over medium-high heat.
- Add diced chicken and season with salt and pepper; cook until browned and cooked through, about 5-7 minutes.
- Add garlic and ginger; stir-fry for 1 minute.
- Add bell peppers and broccoli, and stir-fry for 3-4 minutes until vegetables are tender-crisp.
- Stir in soy sauce and oyster sauce, add cashews, and mix well.
- Cook for an additional 2 minutes until the sauce is heated through.
- Serve immediately over rice or noodles.
Notes
For an authentic experience, serve over fluffy white rice or lo mein noodles. Leftovers can be stored in an airtight container for up to 3 days.
