  • 2 pieces ribeye steaks Fresh and high-quality

For the Chimichurri Sauce
  • 1 cup fresh parsley, chopped Adds a fresh flavor
  • 1/2 cup fresh cilantro, chopped Can be substituted with other herbs like oregano
  • 4 cloves garlic, minced Roast for a milder flavor if desired
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar Provides acidity to balance flavors
  • 1 teaspoon red pepper flakes Adjust for spice level

Preparation
  1. Preheat a grill or skillet over medium-high heat.
  2. Season the ribeye steaks with salt and pepper to your liking.
Chimichurri Sauce
  1. In a bowl, combine parsley, cilantro, garlic, olive oil, red wine vinegar, red pepper flakes, salt, and pepper. Mix well until combined.
Cooking
  1. Cook the steaks in the preheated grill or skillet for about 4-5 minutes on each side for medium-rare, or until they reach your desired level of doneness.
  2. Remove the steaks from heat and let them rest for 5 minutes to allow the juices to redistribute.
  3. Serve the steaks topped generously with chimichurri sauce.

Notes

Pair with a fresh garden salad or grilled vegetables. Store leftovers in an airtight container in the refrigerator for 3-4 days.
