Method
 

Preparation
  1. In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
  2. In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve chilled or at room temperature.

Notes

Store in an airtight container in the refrigerator for 3 to 5 days. Drain excess liquid if vegetables become soggy.
