Ingredients
  

For the Chickpea Filling
  • 1 cup canned chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp ground cumin
  • Salt and black pepper to taste
  • 1/2 cup crumbled feta cheese
  • 1 cup cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
For the Yogurt Sauce
  • 1 cup plain yogurt
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • Salt to taste
For the Wraps
  • 4 large flour tortillas or wraps

Method
 

Preparation
  1. In a skillet over medium heat, heat 1 tablespoon of olive oil.
  2. Add the chickpeas, paprika, ground cumin, and season with salt and black pepper. Sauté for 5–7 minutes until lightly golden and fragrant.
  3. In a small bowl, whisk together the yogurt, lemon juice, minced garlic, 1 tablespoon of olive oil, and salt until smooth.
  4. Warm the wraps slightly in a microwave or a skillet to make them pliable.
  5. Spread the yogurt sauce evenly over each wrap.
  6. Top with the seasoned chickpeas, crumbled feta cheese, diced cucumber, halved cherry tomatoes, and thinly sliced red onion.
  7. Roll up the wraps tightly, tucking in the ends, and serve immediately.

Notes

For extra flavor, add a dash of lemon zest to your yogurt sauce. You can swap out chickpeas with black beans or grilled chicken. Prepare the chickpeas and yogurt sauce in advance for quick assembly. Fresh herbs like parsley or cilantro can add freshness.
