  • 1 tablespoon lemon juice

  • to taste pepper
  • fresh parsley or cilantro, chopped (optional) for garnish

Method
 

Preparation
  1. In a large bowl, combine the chickpeas, cucumber, red onion, and bell pepper.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Garnish with fresh parsley or cilantro if desired.
Serving
  1. Serve chilled or at room temperature.

Notes

This salad can store in the refrigerator for up to three days. For best results, store the dressing separately and combine just before serving. Chill the salad for at least 30 minutes before serving to enhance flavors.
