For the tacos
  • 8 pieces corn tortillas Warm on the grill or in a skillet.
  • 1/2 cup diced onion Add fresh for crunch.
  • 1/2 cup chopped cilantro Provides fresh flavor.
  • 2 pieces limes, cut into wedges For squeezing on top.

Preparation
  1. Marinate the chicken in your choice of spices or marinade for at least 30 minutes and then grill until cooked through.
  2. Warm the corn tortillas on the grill or in a skillet.
  3. Slice the grilled chicken into strips.
  4. Assemble the tacos by placing grilled chicken on the warm tortillas.
  5. Top with diced onion and chopped cilantro.
  6. Serve with lime wedges for squeezing on top.

Notes

For added flavor, consider adding chopped jalapeños or hot sauce. Leftovers can be stored separately for freshness; consume within 3 days for chicken and 1 day for toppings.
