Ingredients
  

Marinade
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste Adjust according to preference
Main Ingredients
  • 1 pound chicken breast, cut into 1-inch cubes
  • Skewers (wooden or metal) Soak wooden skewers in water for 30 minutes before grilling

Method
 

Preparation
  1. In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Add chicken cubes to the marinade and toss to coat.
  3. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
Cooking
  1. Preheat the grill to medium-high heat.
  2. Thread marinated chicken onto skewers.
  3. Grill skewers for 10-15 minutes, turning occasionally, until chicken is cooked through and has grill marks.
Serving
  1. Serve with warm pita bread, tzatziki sauce, and assorted vegetables.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated oven or on the grill to regain the char.
