  • 2 large bell peppers (red and yellow), chopped into 1-inch pieces
  • 1 medium zucchini, sliced into half-moons
  • 1 red onion, cut into wedges
  • 1 cup broccoli florets
Seasoning and Oil
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
Garnish
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper for easy cleanup.
  2. In a large mixing bowl, combine the sliced chicken sausage, bell peppers, zucchini, red onion, and broccoli.
  3. Drizzle the olive oil over the mixture. Sprinkle with garlic powder, dried oregano, smoked paprika, salt, and black pepper.
  4. Toss everything together until the sausage and vegetables are evenly coated with oil and spices.
  5. Spread the mixture onto the prepared baking sheet in a single, even layer.
Cooking
  1. Place the pan in the oven and roast for 20 to 25 minutes. Halfway through the cooking time, use a spatula to toss the ingredients so they brown evenly.
  2. Remove from the oven when the sausage is browned and the vegetables are tender and slightly charred at the edges.
  3. Garnish with fresh parsley if desired and serve immediately.

Notes

Ensure all vegetables are cut into similar sizes for even cooking. For a heartier meal, serve over rice or quinoa. Store leftovers in an airtight container for up to 4 days.
