For the Kofta
  • 1 lb ground chicken
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • Salt and pepper to taste
For the Garlic Yogurt Sauce
  • 2 cups Greek yogurt
  • 2 cloves garlic, minced (for the sauce)
  • 1 tbsp olive oil
  • 1 large lemon, juiced
  • A pinch of salt
To Serve
  • Pita, rice, or salad For serving

Method

Preparation
  1. In a bowl, mix ground chicken, onion, garlic, parsley, cumin, coriander, paprika, salt, and pepper until well combined.
  2. Form the mixture into small oval shapes to create kofta.
Cooking
  1. Heat a grill or skillet over medium heat and cook the kofta for about 5-7 minutes on each side until browned and cooked through.
Make the Sauce
  1. In another bowl, prepare the garlic yogurt sauce by combining Greek yogurt, minced garlic, olive oil, lemon juice, and a pinch of salt. Mix well.
Serving
  1. Serve the kofta warm with the creamy garlic yogurt sauce on the side and accompany with pita, rice, or salad.

Notes

Mix gently to maintain tenderness when preparing kofta. Adjust spices to taste. The garlic yogurt sauce tastes better after chilling.
